Tomato Olive Rotini Recipe

Hey lovelies! Hope y’all are having a wonderful week so far. Life can get pretty busy and thinking about what to serve your family or what to cook for your next meal can be a daunting task. So today, I’d like to help you out with this recipe!

I created this Tomato Olive Rotini Pasta, and was pretty impressed with how the olives completed the flavor of this dish. So read on if you want to see how it looks like and how easy it is to make. I promise, you will change your view on olives.

I know not everyone likes to eat olives. My hubby isn’t so much of a fan, and he’s not the only one in our family who doesn’t like the taste of olive either.

I, on the other hand, eat it. It’s not something I crave, but I like the flavor it gives to my fave pizzas, pastas and other dishes. I can tell why others don’t like the taste of most olives though. More often than not, it gives off a bitter taste.

But as it turns out, we were just eating the wrong kind of olives!

I had the chance to try Mezzetta Olives for the first time and my mind was blown! Who knew olives could taste this good? I am not being biased, guys. This is an HONEST OPINION!

If you haven’t tried Greek Kalamata Olives from Mezzetta, you should. I am adding it to my tomato-based pasta recipes from now on. Too funny, I cooked this Tomato Olive Rotini for lunch and had the hubby try it. He said, “was that a sausage?” He couldn’t even distinguish the olives from sausage.

LOL! I’d say that is a win! Now, he can eat olives with me and enjoy the many health benefits from it!

Aside from dishes, I’ll now be able to garnish cocktails like martinis, among others, with olives too. While Mezzetta has a specific martini olives variety, I used this Italian Castelvetrano whole green olives to garnish a drink.

Let me tell you, I was scared to eat this kind of green olive. It appears a darker green than most green olives, that I was thinking this could taste really bitter. But you know what? I was surprised it had that crunchy, butter flavor and was hooked.

I can definitely serve this on a cheese platter and garnish just about anything! I’m all about garnishing dishes during the Holidays. Little touches like these make meals extra special and feel so festive!

I’m really glad I discovered Mezzetta Olives because it has definitely turned our feelings towards olives! If you are making a recipe that calls for olives this holiday season or any other day for that matter, try one from Mezzetta.

Tomato Olive Rotini Recipe Print Prep time 5 mins Cook time 12 mins Total time 17 mins Delicious rotini pasta based in tomato, basil and olives. Author: Cris Zaragoza Recipe type: Pasta Cuisine: Italian, Mediterranean Serves: 4 Ingredients
  • 1 box of Rotini Pasta
  • 1 tbsp oil, olive oil suggested
  • 1 tbsp minced garlic
  • 1 can diced tomatoes with basil (or diced tomatoes mixed with chopped fresh basil)
  • ⅓ cup pitted Greek Kalamata olives, sliced
  • ¼ cup Havarti cheese, cubed (you can also use any crumbled cheese, parmesan, romano)
  • Salt and Pepper to taste
  • Parmesan or Crumbled cheese to top, optional
Instructions
  1. First, cook the box of rotini pasta according to package directions, drain and set aside.
  2. While the pasta is cooking, slice your Greek Kalamata olives and set aside.
  3. Heat oil in a pan.
  4. Add the minced garlic and sauté until golden brown.
  5. Add the can of diced tomatoes with basil.
  6. Add the cooked pasta and olives to the pan and gently stir.
  7. Add your favorite cheese and gently stir until it melts into the pasta.
  8. Season with salt and pepper.
  9. Transfer to a serving dish and top with parmesan or your favorite crumbled or shredded cheese.
