Spring Snacking Made Easy (And Healthy!)

Being pregnant and taking care of an almost two-year-old toddler who isn’t in daycare, while also working, I can safely say I fancy myself somewhat of a snack expert (sitting down for a “civilized” meal… less so).

For example, when people ask me how I workout for 45 minutes a day – more or less uninterrupted – with a toddler next to me, I say the answer is simple: snacks! And I’m not talking about Oreos and Bamba.

I’ve always made an effort to search out “healthy” snacks for those days that cucumber sticks and hummus aren’t cutting it for both myself and my loved ones. For me that means snacks that are high in fiber and protein and low in added sugar and sodium (I care less about naturally occurring sugar though I try to keep that at bay as well).
