Prep Time 10 minutes

Cook Time 15 minutes

Total Time 25 minutes

Ingredients

  • 6 chicken breast cutlets or thin-sliced
  • chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Extra-virgin olive oil or your favorite neutral oil for sautéing
  • 1 (7-ounce) jar sun-dried tomatoes packed in oil
  • 2 teaspoons minced garlic
  • 2 teaspoons Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese
  • 2 cups baby spinach (about 2 big handfuls)
  • 1/4 cup lightly packed fresh basil leaves
  • 12 ounces dried pasta (your favorite shape), cooked and drained, and tossed with butter, salt and pepper, and more Parmesan cheese to taste

Instructions

    1.

Lay the chicken breast cutlets out on a clean work
surface like a rimmed baking sheet. Pat both sides dry with paper towels, then
season lightly with salt and pepper.

    2. In a large ziplock bag (or a reusable storage container
with a tight-fitting lid), combine the flour, Parmesan cheese, and garlic
powder, plus a big pinch of salt and some pepper. Toss the mixture until evenly
    dispersed.

Add the chicken breasts and toss gently until they are fully coated
    on both sides.

    3. Pour 1 to 2 tablespoons oil into a large skillet over
medium heat. Add the chicken breasts and cook until golden on the bottom, about
6 minutes. Use a spatula or a pair of tongs to flip the chicken over and cook
again until golden on both sides, another 5 to 6 minutes.

    Place the chicken on
a clean plate and set aside. Reduce the heat under the skillet to medium-low.

    4. Pour 2 tablespoons of oil from the sun-dried tomatoes
into the skillet. Add the minced garlic and Italian seasoning, and sauté for
about 1 minute until the garlic is fragrant.

    Add the chicken broth, heavy
cream, and half of the sun-dried tomatoes in the jar. Bring the sauce to a
simmer. Stir in the Parmesan cheese and the baby spinach, then tuck the chicken
back into the skillet, and continue simmering until the chicken is cooked
through, about 5 more minutes. Salt and pepper to taste.

    5.

Just before serving the chicken, mince or chiffonade the
basil. Serve the chicken alongside or on top of your favorite pasta, with a
little fresh basil sprinkled on top.

Additionally, don’t forget to pick up your copy of Farmhouse Christmas: Recipes and Crafts for a Cozy Homemade Holiday by Melissa Bahen. I promise you it features recipes you’ll use during holidays and all season long.

I love this quote from Melissa Bahen about this Parmesan Chicken Sun Dried Tomato and Cream Sauce recipe, “Some people insist on a holiday ham for Christmas dinner, some on beef, and some don’t care at all! She goes on to say, “I wanted to include a few different “fancy” holiday main courses in this book so you could make whatever felt right to you.

I worked on several chicken dishes but kept coming back to this one again and again. Unlike some of the other recipes I tried, this one is not only delicious, but also really easy, and during the busy-ness of the holiday season, that’s pretty priceless. Plus, with its flecks of red and green, it’s dressed for the holidays!”
